Coconut Almond Berry Bars

These are delicious! Enjoy as a snack, breakfast, or on the go meal. Makes 9 servings.

Coconut Almond Berry Bars


  • Ingredients:
  • ¼ cup coconut oil
  • 1/3 cup almond butter
  • ½ cup water
  • 1 egg
  • ½ tsp salt
  • 2 cups almond flour
  • 2 tbsp coconut flour
  • ½ tsp baking soda
  • 2 cup raspberries
  • 1 tsp liquid flavored stevia (I used English Toffee flavor)


  1. Preheat oven to 350F.
  2. Melt coconut oil in microwave, about 30 seconds and transfer to a medium-sized mixing bowl.
  3. Mix melted coconut oil with almond butter, liquid stevia, egg, wand salt using a fork.
  4. Add almond flour, coconut flour, water, and baking soda to the mixing bowl. Mix until all ingredients are well combined.
  5. Pour batter into a baking pan and smooth evenly.
  6. Top with raspberries. Lightly press berries into the batter.
  7. Bake about 1 hour 20 minutes.
  8. Cool a few minutes before cutting into squares. Store in refrigerator.
